GF wraps can be so hard to roll into burritos and tacos. Try this folded breakfast style wrap as the tortilla will not break, it'll just crisp up perfectly when you toast it. These are all of my favorite breakfast ingredients, but you can add almost any variety of ingredients that you choose. Have fun and enjoy!
1 GF burrito sized wrap (I used a La tortilla Factory GF wrap)
1 1/2 cooked pieces of GF bacon
1 scrambled egg
1 tbsp cheddar cheese
1/3 cup shredded hash browns
4 slices avocado
1 tbsp oil of choice or butter
optional addition of a yummy hot sauce (I used a local Minnesota AMAZING habanero garlic hot sauce, Cry Baby Craigs)
Cut a line in the tortilla down the middle of the tortilla but only going half way up.
Add the GF bacon in one quadrant, the eggs, cheese and hot sauce in the second quadrant the hash browns in the third, and the avocado in the forth.
Start folding up from the bottom left corner, fold up, over, and down.
Heat oil or butter in a pan over medium heat. Toast the tortilla for about 2 minutes on each side until it begins to get golden brown and crispy. Drizzle with more hot sauce and enjoy!
