Crispy Garlic Mushroom Chicken Thighs

Simple, gluten free, and easily made dairy free. The perfect dish that is sure to impress tonight for New Year’s Eve or any night! You can serve it over rice or potatoes for a full meal! What are you eating/drinking tonight?!


  • 4 skin on bone in chicken thighs

  • 1 tsp paprika

  • 2 tsp garlic powder divided

  • 1 tsp onion powder

  • 2 tsp Italian seasoning divided

  • 1 tsp salt

  • 2 tsp ground sage

  • 2 tbsp olive oil

  • 8 - 12 ounces cremini mushrooms chopped in quarters

  • 2 tbsp butter (or DF buttery spread

  • 3 - 4 tbsp crushed garlic cloves

  • Optional Parmesan, nutritional yeast (for DF option), and fresh parsley for topping


  1. Preheat oven to 425 Season chicken with paprika, 1 tsp garlic powder, 1 tsp Italian seasoning, sage, and salt

  2. Heat olive oil over high heat in an oven safe pan until it sizzles

  3. Add the chicken and cook 3-4 minutes each side until it starts to get crispy and golden

  4. Lower heat to medium, add butter and the mushrooms

  5. Sprinkle with salt, remaining garlic powder and remaining Italian seasoning

  6. Cook mushrooms 3 or 4 minutes until they release their liquid

  7. Add the chicken back in and add crushed garlic cloves

  8. Put in middle rack of the oven for about 30 min or until chicken reaches an internal temp of 160 degrees

  9. Top with parmesan, parsley and nutritional yeast!
